After the first time I made these cookies, I made them another three times in a row. I feel like tells you everything you need to know about how good they are!

Ingredients
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon fine sea salt
- ½ teaspoon ground cinnamon
- ½ cup salted butter (softened)
- ½ cup granulated sugar
- ½ cup light brown sugar (packed)
- 1 egg
- 1 teaspoon pure vanilla extract
- 1 ½ cup old-fashioned oatmeal
You can also totally add some fun mix-ins. I’ve done chocolate chips so far, but you could add raisins, M&Ms, or any other little treats you have lying around!
Instructions
- Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius)
- Line two large baking sheets with parchment paper
- Combine the flour, baking soda, baking powder, salt and cinnamon in a small bowl
- Put softened butter, granulated sugar and brown sugar in a bowl and mix for 1 minute, or until light and fluffy
- Add egg and vanilla and mix until combined
- Add the dry and wet ingredients together and mix until combined
- Then fold in the oatmeal
- If desired, add in mix ins until evenly distributed in the dough
- Use a 1 ½ to 2 Tablespoon cookie scoop to measure out portions of dough
- Roll the dough into balls and place evenly spaced on the prepared cookie sheet – about 1 ½ inches apart
- Gently press down the tops of the oatmeal cookies until they are slightly flattened
- Bake in preheated oven for 8-10 minutes until the top is just set and the edges are lightly browned
