Chewy-Soft Oatmeal Cookies

After the first time I made these cookies, I made them another three times in a row. I feel like tells you everything you need to know about how good they are!

Ingredients

You can also totally add some fun mix-ins. I’ve done chocolate chips so far, but you could add raisins, M&Ms, or any other little treats you have lying around!

Instructions

  • Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius)
  • Line two large baking sheets with parchment paper
  • Combine the flour, baking soda, baking powder, salt and cinnamon in a small bowl
  • Put softened butter, granulated sugar and brown sugar in a bowl and mix for 1 minute, or until light and fluffy
  • Add egg and vanilla and mix until combined
  • Add the dry and wet ingredients together and mix until combined
  • Then fold in the oatmeal
  • If desired, add in mix ins until evenly distributed in the dough
  • Use a 1 ½ to 2 Tablespoon cookie scoop to measure out portions of dough
  • Roll the dough into balls and place evenly spaced on the prepared cookie sheet – about 1 ½ inches apart
  • Gently press down the tops of the oatmeal cookies until they are slightly flattened
  • Bake in preheated oven for 8-10 minutes until the top is just set and the edges are lightly browned
